Why did I Study Nutrition and Health Coaching?

It’s on returning to Bali in 2018 that I’ve finally put this site together. To be honest its been a long time coming, I decided back in 2014 that I wanted to write some sort of food blog. Since then I’ve studied and trained and spent countless hours in the kitchen obsessing over recipes.

I’ve baked, chopped, cooked, cultured, dehydrated, fermented, invented, preserved, prepped. picked, pickled, sliced, sprouted…

I LOVE to make food from scratch. I’ve made my own bread, yogurt, pickles, butter, cheese, kefir, veggie stock… You know, the things normal people like to buy in the shops. Pretty much the only thing I haven’t tried yet is alcohol and only because I haven’t really spent long enough in one place! Making things from scratch helps me to really understand each ingredient I use and this in turn helps me to create great food 🙂

I’ve been vegetarian for over 12 years now and I’ve seen a huge change in the quality and availability of vegetarian and vegan food both in Ireland and abroad during this time. As more and more people make the change to eat less meat, I receive more requests in my inbox asking for advice and recipes to help make this transition easier.

The move into health and wellness coaching is a natural one for me. After years of studying food, yoga and researching human digestion and gut health (just for fun) I want to share my knowledge with others. I’m lucky enough to now be studying for my certificate with the Irish Institute of Nutrition and Health. I feel uniquely equipped to offer support and guidance to those looking to transform their lifestyle, particularly those looking to add more plant based or whole foods to their diet.

I believe that we’re all unique. There can be no “one size fits all” approach to diet. Vegan? You’re right. Paleo? Sure. Intermittent fasting? If that’s what works for you. Different things work for different people. It’s finding what feels right for you is what’s important. Having said that… I think we can all agree that eating more vegetables, more whole foods and less processed crap is good for us all.

My purpose through my website, my health coaching practice and my food is to show you how you can easily add more goodness to your diet. I want you to get excited about sitting down to a plant based meal and eat vegetables because you want to and not because you have to 🙂
